Now, we’re delighted to introduce something truly unique to our offering: our very own Killowen Barántúil Single Cask Whiskey.
When head distiller and founder at Killowen, Brendan Carty explained Belfast’s rich distillation history, we discovered that oats once played a much more central role in mashbills than they do today. With that in mind, we felt it only fitting that our whiskey should honour this tradition.
Working with the skilled team at Killowen, we helped to create a mashbill that celebrates the Oates family name… Developed in Killowen’s unique style as a contemporary nod to Pure Pot Still Irish Whiskey, this spirit reflects the heritage of Irish distilling while also looking to its future.
Developed as a contemporary acknowledgement of Pure Pot Still Irish Whiskey, using the Killowen style of production, this whiskey cannot currently be called ‘Pot Still’, which was temporarily legislated from existence. But thanks to the efforts of historians and true Irish whiskey appreciators, Pot Still of this style will soon retake its rightful place at the heart of Irish distilling.
Mash Bill
Measured by the sack, just like it used to be. Killowen grain is milled freshly on site during mash in. 100% of this mash is Irish sourced.

They run their stills very slowly; 7am-7pm. Cuts vary and are done by the nose.

Using a cask chosen for vibrancy and spice, this spirit was a period in Killowen’s experimentation where they reduced the malt content, removed wheat and increased unmalted barley in an attempt to lean further into Pot Still spice. That spice was certainly evident but carefully they balanced this off in a 120 litre PX Sherry cask to create a thick, sweet & spice bomb that carries the Killowen DNA long into the finish.
