DUNVILLE'S 1808 PORTUGUESE CHERRY BRANDY CASK FINISH
In early 2024 we were approached by Seamus and the Echlinville Distillery to see if we’d be interested in selecting our own single cask whiskey for the Garrick. We took a day off and made our way along the Ards Peninsula to their beautiful distillery. After a tour we sat down with Seamus, Stephen, Shane and Niall to sample 6 d ifferent finishes. After some extensive discussion (and a few platters of sandwiches & buns) we managed to narrow it down to 2.
We brought the 2 samples back to the Garrick and over the next week or so we
held blind tastings with staff, customers and a few industry experts that happened to be
around that week. As approachable as it is interesting, our collaborative release with Dunvi lle’s Irish Whiskey punches well above its price tag. A modern blend of pot still, grain & malt whiskeys matured in virgin oak and ex bourbon casks before being finished in a Portuguese Cherry Brandy Cask exclusive to The Garrick Bar. Bright orchard fruit skins, stewed red fruit and cherry jam, underlined by gentle warming spices and giving way to dark chocolate and a long lasting mouthfeel.
Nose
Soft and approachable, with orchard fruits, mixed fruit salad chews, lemon tarte au citron, soft meringue, Chantilly cream giving way to red apple skins, ripe plums and candy glazed cherries.
Palate
Soft and approachable, with orchard fruits, mixed fruit salad chews, lemon tarte au citron, soft meringue, Chantilly cream giving way to red apple skins, ripe plums and candy glazed cherries.
Finish
Medium and warming, with black forest gateau giving way to dark chocolate, ginger, candied citrus peels, Chai tea and clove.
This is a one off single cask and limited to 357 bottles, once it’s gone, it’s gone! The Dunnville’s 1808 Casked in Bond series now includes many of our favourite bars in Belfast, Ireland and as far as the US with Maddens Bar (Belfast), Dick Macks (Dingle), Celtic Whiskey Shop (Dublin) & The Snug Bar (Indianapolis) to name a few, releasing some interesting finishes.
